When I'm looking at my profile I always see in the undiscovered creatures the Hydra and a mammoth someone could tell if there's a specific level where you can find it or it is totally random?

It depends on the area, so just look trough your areas and see which one has the hydra or mammoth blacked out. https://angeldu.st/en/areas

I believe the last time i came across one was in the frostbite barrens, they should appear to be a red wyrm in it's first stage until it gets damaged enough to grow 2 more heads.

Scratch the frostbite barrens, it was the crystal highlands.I still got my personal save spot there.
